Easter Recipes
With Easter on the horizon, the allure of chocolate indulgence is hard to resist. However, amidst the excitement of sweet treats, striking a balance is essential. Let’s celebrate Easter with decadence and nutrition in mind this year. We’ve put together some recipes that pair perfectly with chocolate delights, starting the day with a flavorful Shakshuka and repurposing leftover chocolate into Hot Cross Bun Energy Balls. It’s all about enjoying the holiday while simultaneously keeping our energy levels stable and our bodies nourished.
Shakshuka
A colourful and nutritious way to start the day. Serve with fresh sourdough for a perfectly nutritionally complete meal, setting you up well for the day!
Ingredients (serves 2):
- 4 eggs
- 1 red pepper
- 1 yellow pepper
- 2 red onion
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp cumin powder
- 1 tsp dried oregano
- 1 can chopped tomatoes
Method:
- Dice the onion, slice the red peppers and finely grate the garlic.
- Place in a large frying pan on the heat, and add a little oil. Add the onion, peppers and garlic.
- Begin to fry until the onion begins to wilt down. Add the spices and herbs and fry to coat all the veg.
- Preheat the oven to 170ºC.
- Once all the veg has cooked down and it begins to colour add the tomato paste and mix through the veg.
- Cook the tomato paste for 4-5 minutes then add the chopped tomatoes. Cook for a further 20 minutes on a low heat.
- Make 4 wells in the top of the dish and crack the eggs into them.
- Place the pan into the oven and cook for 10-15 minutes or until the egg white is cooked and the egg yolk is still slightly runny.
- Remove from the oven and serve!
Hot Cross Bun Energy Balls
Whether you want a seasonal bake or a way of using up some of your Easter chocolate, we’ve got you covered with our Hot Cross Bun Energy Balls. What’s better yet – they’re freezer-friendly, so perfect for those busier weeks, just make sure they’re full defrosted before eating.
Ingredients (makes 12-15):
- 125 grams ground almonds
- 60 grams rolled oats
- 60 grams vanilla protein powder of choice
- 1 ½ teaspoon mixed spice
- 1 ½ teaspoon cinnamon
- 1 teaspoon ginger
- 60 grams sultanas
- 60 grams chocolate chips
- 60 ml of orange juice
- 2 tbsp coconut oil
Method:
- Put all the dry ingredients in the bowl of a food processor and blitz until fine.
- Add the sultanas, chocolate chips and wet ingredients to the blender and process until the mixture comes together in a rough ball.
- Roll heaped teaspoonfuls of mixture into balls, and refrigerate them until firm.
- Store your energy balls in the fridge or freezer.
